Persian Style Carrot Salad

I don’t remember where I found this recipe, but since I discovered it this is one of our standards and an exotic  small present for shared buffets. Sour apples are the best for this recipe.

You need:

  • 2 cups  apples, peeled and coarsely grated
  • 2 tablespoons lemon juice
  • 3 cups carrots, peeled and coarsely grated
  • 1/2   cup almonds, toasted and coarsely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sugar


  1. Prepare the apples and sprinkle with lemon juice to prevent oxidation. They will change their color, but you can reduce this adding the lemon juice as soon as possible.
  2. Add all the other ingredients.
  3. Check the taste and if necessary adjust it adding more lemon juice, but don’t add salt as this will soak water.
  4. Refrigerate at least one hour (better 2-4 hours) as this will improve the flavor.
  5. Serve and enjoy.
