Salad with Preserved Rock Samphire

I like picking wild vegetables and I love prepere them.

In one of my previous posts I gave you the recipe for “Preserved Rock Samphire

You need (quantities to taste!):

peeled and boiled, cooled and  sliced potatoes

young zucchini, boiled until just soft, cooled and sliced

preserved rock samphire (See my link: Preserved Rock Samphire)

olive oil

lemon juice

salt and pepper


Arrange and a plate in this order: potatoes, zucchini and rock samphire.

Sesason with olive oil, lemon juice, salt and pepper.

Serve and enjoy!
