A great surprise for your family or friends: a warm dessert with a caffeine kick and more!

Black Forest Mocha

You need:

  • 30 g black chocolate ( or milk chocolate if preferred)
  • 1 small cup of freshly brewed coffee, best if espresso
  • 1 tablespoon chocolate syrup (optional)
  • 2 tablespoons Kirsch (cherry brandy), quantity to taste
  • 1/2 cup whipped cream (sweetened if preferred)
  • Cherry syrup
  • Additional whipped cream, for topping
  • Shaved chocolate, for topping

Procedure

  1. Cut chocolate into pieces and place it in a microwave proof bowl or in a saucepot.
  2. Top with hot coffee and heat (microwave or stovetop) and stir to dissolve completely. Add Kirsch and stir once.
  3. Combine whipped cream with cherry syrup and stir only shortly.
  4. Poor the coffee into the cup, spoon the prepared cherry-whipped cream on top.
  5. Dot with little more white whipped cream and top with the shaved chocolate.
  6. Serve immediately and enjoy.

Hot Golden Spiced Frappuccino

Hot Golden Spiced Frappuccino

Today I would like to propose you an eye catching beautiful frappucino with 4 layers: golden milk, coffee, milk foam and chocolate syrup.

You may also prepare the summer variation with cold ingredients (using a milk frothier for the cold milk for a more stable foam) pouring them over ice cubes!

In my blog you will find the recipe for “golden chai spice mix” with some serving suggestion.

You need:

  • 1/3 cup milk (I used soy milk)
  • 1 teaspoon golden chai powder mix, see my post
  • 1-2 teaspoons sugar
  • 1/4 cup hot coffee or 1 espresso
  • Chocolate syrup (I made it myself and I added some cardamom) or cinnamon powder

Procedure:

  1. Heat the milk in a jar the microwave. Watch closely until you see the first tiny bubbles form on the edge in about a minute and turn it off.
  2. Remove from the oven, close the jar and shake until foam forms (if you have a milk frothier it’s even easier). Transfer the foam to the cup using a spoon. If you want more foam, shake it again.
  3. Add the spice mix and the sugar into the milk in the jar and stir well until sugar is dissolved.
  4. Pour the spiced milk on the side of a big cup watching not to disturb the milk foam. For this step the easiest way i
    s to pour the coffee over the back of a spoon to the wall of the cup
  5. Pour the coffee very slowly in the same way into the cup.
  6. Drizzle some chocolate syrup or cinnamon and serve immediately. Enjoy!

Gold Chai Powder

 

My favorite way to serve and outstanding specialty hot beverages to my family or friends is by introducing them to flavored teas or coffee. We make our flavored spice mixtures in batches, using fresh grinded whole spices and other high quality spice powders, so that the blends stay aromatic and highly enjoyable, without being too artificial tasting.

This special precious like gold and intense flavored blend is based turmeric, cardamom, ginger and enriched with other aromas like star anise, nutmeg, fennel and cinnamon.

It’s delicious with simply hot milk or with black tea or even with coffee! A small quantity in cakes (for example carrot cake) would give a special note in a very simple way.

The first time I used a similar blend was simply with soy milk as a chai latte recipe  but then I‘ve discovered how delicious is it with black tea and even with coffee.

I’ve changed the basic recipe a little bit and now I have the blend I need and which is best with the quality of spices I have.

Please don’t forget that each spice can have a very different intensity of aroma (quality, storage and age of the ingredients) and I suggest to check the taste first and if needed adjust to your personal taste.

You need (about 2.5 cups in total) big batch 

  • 1/3 cup whole cardamom
  • 1/4 cup whole star anise
  • 1/4 cup whole fennel seed
  • 1 cup ground turmeric
  • 1/4 cup ground ginger
  • 1/4 cup cinnamon powder
  • 2 teaspoons ground nutmeg
  • 10 teaspoons vanilla sugar

You need (about 2/3 cups in total) smaller batch

  • 4 teaspoons whole cardamom
  • 3 teaspoons whole star anise
  • 3 teaspoons whole fennel seed
  • 12 teaspoons ground turmeric
  • 3 teaspoons ground ginger
  • 3 teaspoons cinnamon powder
  • 1/2 teaspoon ground nutmeg
  • 2-3 teaspoons vanilla sugar

Procedure

  1. With a spice grinder or a food processor work cardamom, star anise and fennel until the powder turns very fine (if necessary sieve it).
  2. Place into a bowl add the other ingredients and stir until well combined.
  3. Store in closed jars in a fresh and dark place.

Barraquito 3 Ways – Wonder Coffee from Tenerife

The first time I saw this coffee at the table of neighbors in a restaurant I wondered what kind of dessert it was but I did not ask for this. We had a great meal and I really did not need more food or sweets.

A few days later we tried the “café leche leche” witch is a simpler version of coffee with milk and condensed milk without the liquor. But we still did not try the barraquito.

As I wanted to replicate the “café leche leche” I came across the barraquito.

The photos were spectacular and I found that we need to try this and see how it works.

Looking at the pictures in the web I realized that the layers were quite different, mostly 5 different layers but even more.

The density and viscosity of the ingredients are the key of this impressive coffee, but also the technique is very important as pouring the ingredients quickly would. The chronological sequence of pouring the ingredients is also very important and the results may very different.

In some of the descriptions steps 4 and 5 (foamy milk and espresso) are inverted!

Sometimes some of the ingredients are mixed first (coffee + liquor or milk +coffee).

Well, I decide to try as I described but as well as inverting steps 4 and 5. The results?

Guess, look at the pictures? Which one got the espresso first?

Finally I changed the experiment adding in this sequence: condensed milk, liquor, half of the coffee, hot milk, second part of the coffee and foam of the milk (with little milk). I got 6 layers!

There was another problem to solve: I missed Licor 43 or Tía María. I replaced this an orange-liquor. The result? WOW this was so good! Probably the liquor should be think and “heavy” enough. Psst: in my next experiment I combined the orange liquor with agave syrup for less alcohol, this worked perfectly as well!

A barraquito is something between a coffee and a delicious dessert! Next time in Tenerife I try this and I will bring home a bottle of Licor 43 or/and Tía María!

Solution of the question: the glass with high white level just after the liquor got the milk first.

Barraquito Two Ways – Wonder Coffee from Tenerife

You need

  • 1small cup of espresso
  • Hot milk, to taste
  • 2 tablespoons sweetened condensed milk
  • 1-2 tablespoons liquor (Licor 43 or Tía María)
  • Cinnamon
  • Lemon zest

Procedure:

  1. First of all you need to have all your ingredients ready, including the hot espresso and the milk. Foam the milk with the shaker or the special blender (I did not foam this enough, next time I will foam this better).
  2. In a small glass pour the condensed milk on the bottom first.
  3. Now fill the liquor letting it flowing from the wall of the glass or using the back of a spoon.
  4. In the same way pour the hot foamy milk.
  5. Now pour the espresso looking not to mix the levels. (optional: 5a. some more milk and foam)
  6. Sprinkle with cinnamon and add the lemon zest.

Turkish and Greek Coffee

I was used to prepare my Greek coffee bringing to boil shortly the mixture once or twice, but now I tried a new way and the coffee turned out excellent and from now on I will adopt this method!

Annacia’s Turkish coffee recipe is simply perfect and the coffee I prepared was the best Turkish coffee I’ve ever prepared. The main point is: heat slowly and don’t let it boil. I was scared to prepare this because I still had some coffee (I used Greek coffee powder) that I had to use and I was not sure if this was fresh enough.

The coffee was perfect, great taste, foamy and enough and the powder stood only on the bottom of the cup!

Turkish and Greek Coffee

You need

  • 2 small turkish coffee cups cold water (espresso size!)
  • 2 tablespoons Turkish/Greek ground coffee (powder)
  • 4 teaspoons sugar or to taste
  • 2 pinch ground cardamom

Procedure

  1. In a small pot heat the water with the sugar and cardamom (no cardamom for the Greek version).
  2. When I you see that the water is warm stir once to dissolve the sugar and add the coffee.
  3. Heat slowly, without bring it to boil.
  4. Stir once as soon as the coffee starts to sink and the foam begins to be formed. Don’t let the coffee boil and let it “to rise”, if this happens remove quickly from the heat.
  5. Brew for about 2 minutes until I feel that it was ready, foamy but no more coffee powder on the surface.

When Santa (Athina was my very generous Santa this year) brings you such adorable coffee mugs and you wish to keep the Christmas spirits in your house, then you know: it’s time to prepare a festive coffee, stop the time machine and keep the magic atmosphere around you.

An easy way to prepare a spiced- infused coffee is add the spices in-between to layer of coffee powder, then brew you coffee slowly.

I used my old coffee machine, but you can use what you find more convenient for you. As sweetener I love brown sugar and milk or cream may be an option for those who are used to this.

This method is quite simple and at once your coffee will fill your house with Christmas spirit. Feel free to try with different spices and flavors! Variations: use all spice, nutmeg, anise, mace, powdered chocolate, cloves….

You need:

 All quantities to taste!

  • 4 teaspoons coffee powder
  • 2 pinches ground cinnamon
  • 2 pinches ground ginger
  • 2 pinches ground cardamom
  • 4 teaspoons brown sugar
  • milk or cream to taste

Procedure

  1. Place half of the coffee need into the coffee filter
  2. Layer the spices you like
  3. To with remaining coffee
  4. Brew as usual and serve with brown sugar

If you use simple filter papers you can also mix all the ingredients and brew the coffee.

Amaretto Chocolate Coffee

 

Amaretto-Chocolate-CoffeeThis is a real festive comforting coffee, perfect for Christmas days or simply to enjoy in front of the chimney while outside its cold and snowy.  The inspiration or better the original recipe is called Almond Chocolate Coffee recipe; here Vicki suggests to use dark “creme de cacao”  and as I did not have this ingredient I decided to make my own melting dark chocolate with brandy in the microwave. The result was fantastic so I decided to keep this version for the next ones!

Amaretto Chocolate Coffee

For two cups you will need:

  • 15 g dark chocolate
  • 1-2 tablespoons brandy
  • 3 tablespoons amaretto
  • 150 ml hot espresso, eventually sweetened
  • whipped cream
  • chocolate shavings

Procedure:

  1. Melt in a small bowl the chocolate and the brandy using the microwave: I needed 30 seconds, then I stirred with a spoon and transferred the brandied chocolate into two cups using a spatula.
  2. Add the amaretto, the hot coffee and I finish with whipped cream topped with chocolate shavings.
